Humans have used fermentation in the production of food for centuries — a process that can render certain foods safer for consumption and make their nutrients more bioavailable to our bodies.
Fermentation can be beneficial for one’s health and is known to support many biochemical processes, a healthy gut microbiome, immunity, digestion, and brain health. In this workshop, we will make 2 quick ferments — one that can be maintained over a long period of time and another that is a delicious treat meant to be shared with loved ones and enjoyed during the liveliest of celebrations.
Gingerbugs are starter cultures used to make sodas and fizzy drinks. Tepache is a fermented drink traditionally prepared in Mexico and popular throughout Latin America, the Caribbean, and other parts of the world. We will focus on these fermentations as starting points in a journey toward better gut health and clearer thinking.

All participants will take home both of their starters.

• the chemical process of fermenting
• preparation methods for ginger bugs and tepache
• insights into altering the chemistry of each starter to ensure a more robust outcome
• featuring samples of finished tepache and sodas made with ginger bugs
