Dee’s Perfect Persimmon Bread


1  1/2 c. Canola Oil (or other neutral oil)

2  1/2 c. Sugar

3 Eggs, slightly beaten 

2 c. [Hachiya] Persimmons, peeled (must be ripe, soft & squishy)

2  1/2 c. Cake Flour

1/2 tsp. Salt

2 tsp. Baking Soda

1 tsp. Baking Powder

2 tsp. All Spice

3 tsp. Cinnamon

1 c. Pecans, chopped

1 c. Raisins

Pre-heat oven to 300 degrees. 

Spray & flour 2 lg. loaf pans or 4 medium loaf pans. 

Cream first three ingredients well with mixer.

Add persimmons to mixture & beat well.

Sift together all dry ingredients then gradually add to wet ingredients, mix well to combine.

Add pecans & raisins, fold thoroughly into mixture by hand.

Pour into loaf pans and bake for approximately 1 hr., 15 mins.- 1hr., 30 mins.  

This bread freezes well.  Enjoy :)
